Pumpkin Hummus

A creamy and nutritious pumpkin hummus, perfect for dipping veggies or spreading on sandwiches.

Ingredients

  • 1 can (15 oz) chickpeas
  • 1 cup pumpkin puree
  • 2 tablespoons tahini
  • 2 cloves garlic
  • 1–2 tablespoons lemon juice
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil
  • Optional toppings: paprika, nuts, fresh herbs

Instructions

  1. Rinse the chickpeas under cold water.
  2. Blend together the chickpeas, pumpkin puree, tahini, garlic, lemon juice, cumin, and a pinch of salt and pepper.
  3. Add olive oil gradually while blending until creamy.
  4. Taste and adjust flavors as needed.
  5. Chill in the fridge for about 30 minutes.
  6. Serve with optional toppings of paprika, olive oil, and nuts or herbs.

Notes

Pumpkin hummus stays fresh for about 5 days in the fridge and can be frozen for later use.
