Pumpkin Mac and Cheese

A unique twist on classic comfort food, this Pumpkin Mac and Cheese combines creamy cheese sauce with the warm, earthy flavors of pumpkin puree.

Ingredients

Scale
  • 2 cups Pasta (Macaroni or Cavatappi)
  • 1 cup Pumpkin Puree

  • 1 cup Mozzarella Cheese, shredded
  • 2 cups Milk or Cream
  • 4 tablespoons Butter
  • 4 tablespoons Flour
  • Salt, to taste

Instructions

  1. Cook the Pasta by boiling a large pot of salted water. Add in your pasta and cook until al dente according to package instructions. Don’t forget to reserve a cup of pasta water before draining.
  2. Make the Cheese Sauce by melting the butter in a medium saucepan over medium heat, then whisk in the flour for about 2 minutes.
  3. Add the Milk gradually, whisking constantly until the mixture thickens into a creamy consistency, about 3-5 minutes.
  4. Incorporate the Pumpkin Puree, stirring well to combine. Add a pinch of nutmeg if desired.
  5. Melt the Cheddar Cheese into the sauce, adding a handful at a time until completely melted.
  6. Combine the Pasta gently into the cheese sauce, ensuring each piece is coated.
  7. Bake the mixture in a baking dish (optional) topped with more cheese at 350°F (175°C) for about 20 minutes until bubbly.
