  • 1 cup brown sugar

  • 1 cup semi-sweet chocolate chips
  • 1 cup mini marshmallows

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix together the flour, baking soda, and pumpkin pie spice in a large bowl.
  3. Cream together the brown sugar, pumpkin puree, and egg until smooth.
  4. Add the vanilla extract to the mixture.
  5. Combine the dry ingredients with the wet mixture gradually.
  6. Fold in the chocolate chips and mini marshmallows.
  7. Scoop dough onto a parchment-lined baking sheet.
  8. Bake for 10-12 minutes, or until edges are golden.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For a gluten-free option, use a 1:1 gluten-free flour blend. These cookies are best enjoyed warm with a dollop of whipped cream or vanilla ice cream.
