Pumpkin Walnut Chocolate Chip Cookies

  • 1 cup pumpkin puree
  • 2 cups all-purpose flour
  • 1 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon baking soda
  • 1 cup semi-sweet chocolate chips
  • 1 cup chopped walnuts
  • ½ cup softened butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix together the flour, baking soda, and pumpkin pie spice in a bowl.
  3. Cream the brown sugar and butter until light and fluffy.
  4. Add the egg and vanilla extract, then mix in the pumpkin puree.
  5. Combine the dry ingredients with the wet ingredients, stirring until just combined.
  6. Fold in the chocolate chips and chopped walnuts.
  7. Scoop tablespoons of dough onto a baking sheet lined with parchment paper.
  8. Bake for 12-15 minutes until golden around the edges.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
