  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease your muffin tin or line it with paper liners.
  3. Mix the dry ingredients: flour, sugar, salt, baking powder, and baking soda.
  4. Mix the wet ingredients: beat the egg, then add milk, vegetable oil, and vanilla extract.
  5. Combine wet and dry ingredients, stirring gently until just combined.
  6. Fold in the blueberries carefully.
  7. Fill each muffin cup about two-thirds full.
  8. Bake for 18-22 minutes, or until a toothpick comes out clean.
  9. Cool for 5 minutes before transferring to a wire rack.
