Warm Up with Reuben Soup

A comforting soup version of the classic Reuben sandwich, featuring corned beef, creamy Swiss cheese, and tangy sauerkraut.

Ingredients

  • 1 cup shredded corned beef
  • 1 cup sauerkraut
  • 1 cup shredded Swiss cheese
  • 1 cup heavy cream
  • 4 cups beef broth
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by shredding corned beef and chopping onions, garlic, carrots, and celery.
  2. Sauté aromatics in a large pot over medium heat with olive oil for 2-3 minutes.
  3. Add the chopped carrots and celery, sautéing for another 3-4 minutes.
  4. Stir in the shredded corned beef and add the beef broth, bringing it all to a gentle boil.
  5. Stir in the sauerkraut and let it simmer for 20 minutes.
  6. Reduce heat to low, then stir in the heavy cream carefully.
  7. Toss in the shredded Swiss cheese at the end until melted.
  8. Taste and adjust seasoning if necessary.
  9. Serve garnished with parsley or additional cheese.

Notes

For a lighter version, substitute heavy cream with half-and-half. Feel free to add a splash of vinegar for extra tang.
