Delightful Rhubarb Bars with Cream Cheese

A nostalgic dessert that combines chewy, slightly tart rhubarb bars topped with luxurious cream cheese.

  • 2 cups chopped rhubarb
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup butter, melted
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a 9×13-inch baking dish.
  2. In a medium mixing bowl, toss the rhubarb with granulated sugar and cornstarch, then stir in vanilla extract.
  3. In a large bowl, combine melted butter, flour, oats, and brown sugar until crumbly.
  4. Press two-thirds of this mixture into the bottom of the baking dish.
  5. Spread the rhubarb filling over the crust, then crumble the remaining oat mixture on top.
  6. Bake for 30-35 minutes until the topping is golden brown.
  7. Whip together cream cheese and powdered sugar until smooth, adding vanilla or lemon juice if desired.
  8. Let the bars cool for at least 15 minutes before frosting with the cream cheese mixture.
  9. Chill in the refrigerator for at least an hour before cutting into squares.

Notes

For extra flavor, consider adding berries to the rhubarb filling or nuts to the topping.
