Sweet and Tangy Rhubarb Butter

  • 4 cups rhubarb, chopped
  • 1 cup honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon juice

Instructions

  1. Prep your ingredients by washing the rhubarb and cutting it into 1-inch pieces.
  2. Combine the chopped rhubarb, honey, vanilla extract, cinnamon, and lemon juice in a large saucepan.
  3. Cook the mixture over medium heat until it simmers, stirring occasionally for about 10-15 minutes until rhubarb breaks down.
  4. Blend the mixture until creamy and smooth using a blender or immersion blender.
  5. Cool the Rhubarb Butter to room temperature before transferring it to a sterilized jar for storage.

Notes

For different flavors, add mixed berries, spices, or nuts. To make it vegan, substitute honey with agave syrup or maple syrup.
