Rhubarb Dream Bars

A delightful treat that combines the tangy zing of rhubarb with a smooth, creamy topping, perfect for any gathering.

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1 1/2 cups rhubarb, chopped
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup milk
  • 2 tablespoons cornstarch
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking dish.
  2. Combine flour and powdered sugar in a medium bowl. Cut in softened butter until crumbly. Press into the baking dish and bake for 15–20 minutes.
  3. Whisk together granulated sugar and eggs in a large bowl until smooth. Add vanilla extract and milk, then mix in cornstarch, salt, and chopped rhubarb.
  4. Pour the rhubarb filling over the baked crust and bake for another 25–30 minutes until set.
  5. Cool completely before slicing into squares.
  6. Dust with powdered sugar and serve with cream or ice cream if desired.

Notes

You can use frozen rhubarb; just thaw and drain before using. Experiment with different fruits for variations.
