Instructions

  1. Prep your ingredients: Start by chopping your vegetables.
  2. Whip those egg whites: In a bowl, whisk the egg whites until they’re bubbly and slightly frothy.
  3. Heat the pan: Place a non-stick skillet over medium heat and spray with your cooking spray or add olive oil.
  4. Sauté the vegetables: Toss in the diced onion first; let them cook for about 2-3 minutes until soft, then add the bell peppers and spinach.
  5. Add egg whites: Pour in the whipped egg whites and tilt the pan to let the mixture spread evenly.
  6. Cook gently: Lower the heat to medium-low and let the omelette cook for about 3-4 minutes.
