Apple Crisp Mini Cheesecakes

A delightful twist on a classic dessert that combines the creaminess of cheesecake with the warmth of apple crisp.

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 tablespoons sugar
  • 2 packages (8 oz each) cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups apples, peeled and diced
  • 1 teaspoon cinnamon
  • 1/2 cup rolled oats
  • 1/2 cup flour
  • 1/2 cup brown sugar

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a medium bowl, mix the graham cracker crumbs, melted butter, and sugar until combined.
  3. Line a muffin tin with paper liners and press 2 tablespoons of the crust mixture into each liner.
  4. Beat the softened cream cheese in a large bowl until smooth.
  5. Add the sugar and vanilla extract, beating until well incorporated.
  6. Mix in the eggs one at a time, ensuring each is fully incorporated.
  7. Fold in the diced apples and cinnamon gently.
  8. Spoon the cheesecake mixture over the crusts, filling each liner about 3/4 full.
  9. In another bowl, mix together the oats, flour, brown sugar, and a pinch of cinnamon.
  10. Drizzle in melted butter and stir until the topping resembles coarse crumbs.
  11. Sprinkle the oat topping generously over each cheesecake.
  12. Bake for 20-25 minutes or until the edges are set.
  13. Cool in the pan for 10 minutes then refrigerate for at least an hour before serving.

Notes

Serve with a drizzle of caramel sauce or whipped cream, and sprinkle with extra cinnamon if desired.
