Shepherd’s Pie

A classic comfort food dish that combines savory ground lamb or beef with layered mashed potatoes, perfect for family meals.

  • 1 pound ground lamb or beef
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cups mixed vegetables (peas and corn)
  • 2 tablespoons tomato paste
  • 1 cup red wine
  • 2 cups beef broth
  • 1 teaspoon Worcestershire sauce
  • 4 cups mashed potatoes
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Sauté the Vegetables: In a large skillet, drizzle olive oil and add onions until translucent. Add carrots and celery, cooking for about 5 more minutes.
  2. Brown the Meat: Push vegetables aside, add ground lamb or beef, breaking it up and seasoning it until browned. Drain excess fat if necessary.
  3. Add the Tomato Paste and Wine: Stir in tomato paste, let cook for a minute, then add red wine, scraping the bottom of the pan. Simmer for about 3 minutes.
  4. Incorporate the Broth and Worcestershire Sauce: Pour in beef broth and Worcestershire sauce, let it simmer for about 10-15 minutes until thickened.
  5. Mix in the Veggies: Stir in mixed vegetables and heat through.
  6. Prepare the Mashed Potatoes: Boil potatoes until tender, drain, then mash with butter, salt, pepper, and cream or milk.
  7. Layer the Ingredients: Preheat oven to 400°F (200°C). Spread meat mixture in a baking dish topped with mashed potatoes.
  8. Bake to Perfection: Bake for 25-30 minutes or until top is golden brown and edges are bubbling.
