Smashburger Quesadillas

A flavor-packed twist on two classics, these Smashburger Quesadillas combine the deliciousness of a smash burger with the cheesy goodness of a quesadilla.

Ingredients

  • 2 large flour tortillas
  • 1 lb ground beef
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onions
  • 1/4 cup diced pickles
  • 1/4 cup ketchup
  • 1/4 cup mustard
  • Salt and pepper to taste
  • Oil for cooking

Instructions

  1. Prep your ingredients by chopping onions and pickles, and shredding cheese.
  2. Cook the ground beef in a skillet over medium-high heat with oil, seasoning generously with salt and pepper.
  3. Mix in the onions and cook until softened.
  4. Combine with ketchup, mustard, and pickles off heat.
  5. Assemble the quesadilla by placing the filling on half of a tortilla, topping with cheese, and folding.
  6. Cook in the skillet until golden brown on both sides.
  7. Slice into wedges and serve.

Notes

Don’t overcrowd the pan; cook one or two quesadillas at a time for the best crispiness.
