  • 2 cups All-Purpose Flour
  • 1 cup Brown Sugar
  • 1/2 cup Extra Brown Sugar (for sprinkling)
  • 1 large Egg
  • 2 teaspoons Vanilla Extract
  • 1 teaspoon Pumpkin Pie Spice
  • 1 teaspoon Baking Soda
  • 1 cup Semi-Sweet Chocolate Chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Whisk together the flour, pumpkin pie spice, and baking soda in a medium bowl.
  3. Combine the brown sugar, pumpkin puree, egg, and vanilla extract in a large bowl and mix until smooth.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  5. Fold in the chocolate chips.
  6. Scoop spoonfuls of dough onto lined baking sheets, spacing them 2 inches apart.
  7. Bake for 12-14 minutes, until the edges are lightly golden, then let cool.

Notes

Best enjoyed warm. Can be frozen for up to three months.
