Strawberry Lemon Blondies

Delicious Strawberry Lemon Blondies that capture the essence of summer with fresh strawberries and zesty lemon.

  • 1 cup unsalted butter, melted
  • 1 ½ cups brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup fresh strawberries, chopped
  • 1 zest of lemon
  • 1 tablespoon juice of lemon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare an 8×8-inch baking pan with parchment paper.
  3. Mix the melted butter and brown sugar until smooth.
  4. Incorporate the eggs, one at a time, mixing well after each.
  5. Combine the sifted flour, baking powder, and salt in another bowl.
  6. Gradually add the dry ingredients into the wet mixture, folding gently.
  7. Stir in the chopped strawberries, lemon zest, and lemon juice.
  8. Pour the batter into the pan and spread evenly.
  9. Bake for about 25–30 minutes, until edges are golden brown.
  10. Cool in the pan for 10 minutes, then remove to a wire rack to cool completely.

Notes

Dust with powdered sugar before serving. Serve with whipped cream or vanilla ice cream.
