Strawberry Lemon Blondies

Delicious, chewy blondies infused with fresh strawberries and zesty lemon, perfect for any occasion.

  • 1 cup unsalted butter, melted
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh strawberries, chopped
  • 2 tablespoons lemon juice
  • Zest of 1 lemon

Instructions

  1. Preheat your oven to 350°F (175°C) and grab an 8×8-inch baking dish.
  2. Melt the butter in a medium bowl (about 30 seconds in the microwave). Set aside to cool slightly.
  3. Mix in the brown sugar until well combined. Then, add the eggs one at a time, mixing thoroughly. Add the vanilla extract.
  4. Whisk together the flour, baking powder, and salt in another bowl.
  5. Combine the dry ingredients into the wet mixture, mixing until just combined.
  6. Add the chopped strawberries, lemon juice, and lemon zest, stirring gently to distribute without crushing.
  7. Pour the batter into the greased baking dish and spread evenly.
  8. Bake for 25-30 minutes, or until a toothpick comes out clean.
  9. Cool in the pan for 10-15 minutes before transferring to a cooling rack.
