Peaches and Cream Crumble Bars

A delightful dessert that blends the sweetness of ripe peaches with a buttery crumble and a luscious cream layer.

  • 2 1/2 cups (350 g) all-purpose flour
  • 2/3 cup (140 g) granulated sugar
  • 1/2 teaspoon salt
  • 1 1/4 cups (280 g) cold unsalted butter, cut into small cubes
  • 1/4 cup (50 g) brown sugar, preferably dark
  • 1 cup (200 g) granulated sugar
  • 1/4 cup (35 g) all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 5 cups pitted, peeled, and chopped peaches (about 2.5 pounds)
  • 6 tablespoons (90 ml) heavy cream
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine 2 1/2 cups of flour, 2/3 cup of granulated sugar, 1/4 cup brown sugar, and 1/2 teaspoon salt.
  3. Add the cold, cubed butter into the dry mixture and work it until it resembles coarse crumbs.
  4. Set aside about 1 1/2 cups of the crumble mixture for the topping and press the remaining mixture firmly into a greased 9×13-inch baking dish to create the crust.
  5. Toss together the chopped peaches, 1 cup of granulated sugar, 1/4 cup of flour, 1/2 teaspoon cinnamon, and 1/4 teaspoon salt in another bowl.
  6. Pour the peach mixture over the pressed crumble layer and drizzle 6 tablespoons of heavy cream over the top.
  7. Sprinkle the reserved crumble mixture over the peach filling.
  8. Bake for 45-50 minutes, or until golden brown and bubbly.
  9. Allow the bars to cool in the pan for at least 30 minutes before slicing.
  10. Slice into squares and serve at room temperature or chilled.

Notes

For an extra touch, serve with vanilla ice cream or whipped cream. Drizzle with caramel sauce for a special finish.
