Watermelon and Cucumber Salad with Feta

A light and refreshing salad with sweet watermelon, crunchy cucumber, and creamy feta, perfect for summer gatherings.

Ingredients

  • 4 cups watermelon, cubed (seedless, ripe)
  • 2 cups cucumber, sliced (peeled if desired)
  • 1/2 cup feta cheese, crumbled
  • 1 tbsp olive oil (optional for drizzling)
  • Salt and black pepper to taste

Instructions

  1. Prep the watermelon by cutting it into even cubes and placing them in a large mixing bowl.
  2. Slice the cucumber and add it to the bowl with the watermelon.
  3. Crumble the feta cheese over the watermelon and cucumber.
  4. Drizzle with olive oil if desired.
  5. Season the salad with salt and pepper, and toss gently.
  6. Chill in the fridge for about 30 minutes or serve immediately.
  7. Taste and adjust seasoning before serving.

Notes

This salad is best enjoyed fresh. If made ahead, add feta just before serving to maintain freshness.
