Sweet Potato and Sausage Casserole

A comforting and flavorful sweet potato and sausage casserole that’s perfect for cozy evenings.

  • 2 large sweet potatoes
  • 1 lb sausage (Italian or breakfast)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • Olive oil
  • 1 teaspoon thyme (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel and dice the sweet potatoes into bite-sized pieces.
  3. In a large skillet over medium heat, drizzle olive oil and add chopped onions. Sauté until translucent, about 5 minutes.
  4. Add the sausage, breaking it apart with a spatula, and let it cook until browned, about 8-10 minutes.
  5. Toss in the minced garlic and sweet potatoes. Stir well and cook for another 5 minutes.
  6. Pour in the chicken broth, seasoned with salt, pepper, and thyme if using. Stir and bring to a simmer for about 10 minutes.
  7. Transfer the mixture into a greased casserole dish, top with shredded cheese, and bake for about 20-25 minutes, or until cheese is melted and bubbly.
  8. Let it rest for a few minutes before serving.

Notes

Feel free to experiment with different cheeses and herbs for added flavor. Can be made ahead of time and stored in the fridge before baking.
