  • ½ cup unsalted butter, chilled and cubed
  • ¼ cup granulated sugar
  • 1 egg
  • ¼ teaspoon salt
  • 2 large eggs (for custard filling)

  • 1 cup whole milk
  • 1 tablespoon vanilla extract
  • 4 cups rhubarb, chopped

Instructions

  1. Prep your ingredients: Gather all your ingredients.
  2. Mixing the dry ingredients: In a large bowl, whisk the all-purpose flour, sugar, and salt together.
  3. Cut in the butter: Add the chilled, cubed butter into the bowl and blend until it resembles coarse crumbs.
  4. Add the egg: Beat the egg separately, then pour it into the mixture. Stir until the dough starts to come together.
  5. Chill the dough: Form the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  6. Preheat your oven: Preheat your oven to 350°F (175°C).
  7. Beat the eggs and sugar for custard: In a medium bowl, beat the eggs and sugar until frothy.
  8. Add milk and vanilla: Gradually whisk in milk and vanilla extract until smooth.
  9. Prepare the rhubarb: Toss chopped rhubarb with sugar to draw out moisture.
  10. Roll out the crust: On a floured surface, roll out your chilled dough into a circle about 12 inches in diameter.
  11. Transfer to tart pan: Place the rolled dough into a tart pan and press it into the corners.
  12. Blind bake the crust: Line with parchment paper and fill with weights. Bake for 15 minutes, then remove weights and bake for another 10 minutes.
  13. Layer the rhubarb: Scatter the sugary rhubarb evenly across the bottom of the crust.
  14. Pour the custard: Slowly pour the custard mixture over the rhubarb.
  15. Final baking: Bake the tart for about 30-35 minutes, or until the custard is set.
  16. Cool down: Let the tart cool completely before slicing.

Serve dusted with powdered sugar or with whipped cream or vanilla ice cream.
