Texas Tornado Cake

  • 1 box yellow cake mix
  • 1 cup crushed pineapple, undrained
  • 1 cup shredded coconut
  • 4 large eggs
  • 1 cup granulated sugar
  • 1 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup chopped pecans or walnuts (optional)
  • 1 can cream cheese frosting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×13-inch baking pan by greasing and flouring it.
  3. Mix the yellow cake mix and sugar in a large mixing bowl.
  4. Add the pineapple, shredded coconut, eggs, vegetable oil, and vanilla extract to the dry ingredients.
  5. Mix on medium speed for about 2 minutes until the batter is smooth.
  6. Fold in the chopped pecans or walnuts if using.
  7. Pour the batter into the prepared pan and spread it evenly.
  8. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool the cake in the pan for 10-15 minutes, then transfer to a wire rack to cool completely.
  10. Frost the cooled cake generously with cream cheese frosting.
  11. Slice and serve!
