Ingredients

Scale
  • 200 ml warm water (not hotter than 40 degrees Celsius)
  • 3 tablespoons milk
  • 2 1/2 tablespoons sugar
  • 1 packet dried yeast
  • 2 eggs
  • 485 g (about 4 cups) all-purpose flour (550 type)
  • 1 1/2 teaspoons salt
  • 80 g (about 1/3 cup) soft butter
  • Sesame seeds (optional)
  • 1.2 kg (about 2.5 lbs) shoulder beef (or pre-ground beef)
  • 15 g salt
  • Pepper (to taste)
  • Oil (for frying)
  • 8 slices of sandwich cheese
  • 16 green olives
  • 2 red bell peppers
  • 1 jar of sandwich pickles
  • Ketchup
  • Lollo Rosso lettuce
  • Wave fries (Riffelpommes)

Instructions

  1. Prepare the Bun Dough: In a mixing bowl, combine warm water, milk, and sugar. Stir until the sugar dissolves. Sprinkle in the dried yeast and let it sit for about 5-10 minutes until it becomes frothy.
  2. Mix Your Dough: Add the eggs to the yeast mixture, followed by the flour and salt. Mix until combined, then add the softened butter. Knead the dough for about 10 minutes until it feels smooth and elastic.
  3. First Rise: Place the dough in a lightly oiled bowl, cover it, and let it rise in a warm place for 1-2 hours or until it doubles in size.
  4. Shape the Buns: Punch the dough down, divide into about 10 pieces, and shape into balls. Place them on a baking sheet, leaving space.
  5. Second Rise: Cover the shaped buns with a towel and let them rise for another 30-45 minutes. Preheat your oven to 180°C (350°F) while they rise.
  6. Bake the Buns: Bake for about 20 minutes or until golden brown. Brush them with butter for extra flavor.
  7. Prepare the Patties: Mix minced beef with salt and pepper. Form into patties larger than your buns.
  8. Cook the Patties: Heat oil in a skillet over medium-high heat. Add patties and cook for about 5-7 minutes on each side, adding a slice of cheese just before they’re ready.
  9. Assemble the Burgers: Slice baked buns in half. Place a patty on the bottom half and top with olives, red pepper slices, pickles, and ketchup. Cap it with the top bun.
  10. Serve with Style: Plate on a platter with a side of wave fries sprinkled with salt.
