Easy Slow Cooker Beef Brisket

A juicy, tender, and fall-apart slow cooker beef brisket that’s perfect for family gatherings.

  • 3 to 4 pounds beef brisket
  • 2 tablespoons olive oil
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1/4 cup Worcestershire sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon paprika
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon thyme
  • Optional: sliced carrots and potatoes

Instructions

  1. Start by seasoning the brisket generously with salt and pepper. Pat it dry with paper towels to get a nice crust later on.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the brisket and sear it for about 4-5 minutes on each side until it’s browned.
  3. In the same skillet, add your sliced onions and cook them until translucent, about 3-4 minutes. Then toss in the minced garlic and cook for another minute.
  4. Add the seared brisket to your slow cooker. Pour in the beef broth and Worcestershire sauce, followed by the caramelized onions and garlic. Sprinkle on the brown sugar, paprika, and thyme.
  5. Cover your slow cooker and set it to low for 8-10 hours, or on high for 4-5 hours.

Notes

For added flavor, consider serving with fresh parsley on top or making variations like BBQ brisket or a beer-braised version.
