One-Pot Cajun Chicken Alfredo Orzo

A creamy and flavorful one-pot meal featuring Cajun-spiced chicken and tender orzo pasta, perfect for busy weeknights.

Ingredients

Scale
  • 1 cup Orzo Pasta
  • 1 lb Chicken Breast, diced
  • 2 tablespoons Cajun Spice Blend
  • 1 cup Heavy Cream
  • 3 cloves Garlic, minced
  • ¾ cup Parmesan Cheese, freshly grated
  • 3 cups Chicken Broth
  • 2 tablespoons Olive Oil
  • Salt & Pepper to taste
  • Fresh Basil for garnish

Instructions

  1. Sauté the chicken: Heat the olive oil in a large pot over medium-high heat. Add the diced chicken breast, seasoning generously with salt, pepper, and 1 tablespoon of Cajun spice. Sauté until the chicken is golden brown and cooked through, about 6-8 minutes.
  2. Add garlic & spice: Once the chicken is cooked, stir in the minced garlic and remaining Cajun spices. Sauté for another minute until fragrant.
  3. Incorporate orzo: Pour in the uncooked orzo, stirring to combine. Let the orzo get coated in the spices and chicken goodness for about a minute.
  4. Pour in broth: Add the chicken broth to the pot, covering the orzo completely. Bring it to a gentle simmer, then reduce the heat to medium-low. Cover the pot and let it cook for 10-12 minutes.
  5. Create the Alfredo sauce: Once the orzo is tender and most of the liquid has evaporated, stir in the heavy cream and grated Parmesan cheese. Mix until the cheese melts and everything becomes velvety.
  6. Final touches: Adjust the seasoning with additional salt and pepper if needed. Serve immediately, garnished with fresh basil and an extra sprinkle of cheese.
