Vegan Pumpkin Chocolate Chip Cookies

  • 1 cup pumpkin puree
  • 1 tablespoon ground flaxseed + 2.5 tablespoons water (flax egg)
  • 1/3 cup melted coconut oil
  • 1 cup all-purpose flour (or whole wheat/gluten-free)
  • 1 teaspoon pumpkin spice
  • 1/2 cup dairy-free chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your flax egg by mixing ground flaxseed with water and letting it sit for 5 minutes.
  3. Mix pumpkin puree, flax egg, and melted coconut oil in a bowl until smooth.
  4. Add flour and pumpkin spice to the wet mixture and stir until just combined.
  5. Fold in the chocolate chips, saving a few for topping.
  6. Scoop tablespoon-sized rounds onto a lined baking sheet and bake for 10-12 minutes.
  7. Cool on the pan for 5 minutes before transferring to a wire rack.

Notes

These cookies pair wonderfully with chai or hot cider, and you can dress them up with a drizzle of melted chocolate if desired.
