Beef Barley Soup

A hearty and comforting beef barley soup, perfect for chilly days, infused with tender beef, nutty barley, and fresh vegetables.

  • 2 lbs Beef (Chuck Roast or Stew Meat)
  • 1 cup Barley (Pearl Barley or Hulled Barley)
  • 2 Carrots, chopped
  • 2 stalks Celery, chopped
  • 1 Onion, diced
  • 4 cloves Garlic, minced
  • 8 cups Beef Broth
  • 2 Bay Leaves
  • Fresh Herbs (Thyme or Parsley)
  • Salt and Pepper to taste

Instructions

  1. Sear the beef: In a large pot, heat a tablespoon of oil over medium-high heat. Season your beef with salt and pepper, and brown it on all sides. This should take about 5-7 minutes.
  2. Sauté the vegetables: Once the beef is browned, remove it from the pot and set it aside. In the same pot, add your chopped onion, carrots, and celery. Cook for about 5 minutes until softened.
  3. Add garlic & herbs: Stir in your minced garlic and bay leaves, and cook for another minute until fragrant.
  4. Bring it all together: Return the beef to the pot, adding in the barley and broth. Bring the soup to a boil, then reduce heat to a simmer.
  5. Simmer, stir, season: Let it simmer uncovered, checking occasionally to stir. After about 30 minutes, taste for seasoning, adding more salt and pepper as needed.
  6. Finish up: Once the barley is tender and the beef is easily shredded with a fork, remove the bay leaves. Stir in any fresh herbs of your choice for a final burst of freshness.

Notes

This soup freezes beautifully and can be adjusted for flavor by experimenting with herbs and spices.
