Biscoff Brownies

  • 1 cup Biscoff cookie butter
  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1/2 cup Biscoff cookies, crushed

Instructions

  1. Preheat your oven: Set it to 350°F (175°C) and grease an 8×8-inch baking pan or line it with parchment paper.
  2. Melt the butter and cookie butter: In a medium saucepan over low heat, melt the unsalted butter and Biscoff cookie butter together, stirring frequently, for about 2-3 minutes.
  3. Combine the sugar: Remove the saucepan from heat and stir in the granulated sugar until it’s well combined.
  4. Add eggs and vanilla: Allow to cool slightly, then add the eggs and vanilla extract, mixing until smooth.
  5. Mix dry ingredients: In a separate bowl, whisk together the flour, cocoa powder, and salt. Gradually fold this into the wet mixture until just combined.
  6. Fold in the cookie crumbs: Gently fold in the crushed Biscoff cookies.
  7. Spread into the pan: Pour the brownie batter into your prepared pan, smoothing it out.
  8. Bake: Bake for 25-30 minutes or until a toothpick comes out with a few moist crumbs.
  9. Cool and slice: Allow to cool for 10-15 minutes before slicing.
