Creamy Chicken Gnocchi Soup

A rich and comforting creamy chicken gnocchi soup that brings warmth and nostalgia to your table.

Ingredients

  • 1 pound Chicken Breasts
  • 16 ounces Potato Gnocchi
  • 2 Carrots, chopped
  • 2 Celery Stalks, diced
  • 3 cups Fresh Spinach
  • 1 cup Heavy Cream
  • 4 cups Chicken Broth
  • Salt and Pepper, to taste

Instructions

  1. Sauté the chicken in a pot with olive oil, season with salt and pepper, and sear until golden brown, then chop.
  2. Add the diced carrots and celery to the pot and sauté for about 5 minutes until softened.
  3. Pour in the chicken broth and bring to a gentle boil.
  4. Stir in the potato gnocchi and cook until they float, about 2-3 minutes.
  5. Cream it up by lowering the heat and stirring in the heavy cream, adding chopped chicken back in.
  6. Finish with spinach, stirring until wilted.
  7. Taste and adjust seasoning with salt and pepper.

Notes

Feel free to make this soup vegetarian by swapping chicken for white beans and using vegetable broth. It’s also great with added herbs or a spicy kick.
