Crispy Pita with Chicken & Feta

A delightful, crispy pita filled with juicy chicken and tangy feta, perfect for any occasion.

  • 500 g Chicken Mince
  • 150 g Feta Cheese
  • 1 Medium Red Onion, finely chopped
  • 2 Cloves Garlic, minced
  • 1 tbsp Lemon Juice
  • 1 tsp Lemon Zest
  • 2 tbsp Fresh Mint, chopped
  • 2 tbsp Fresh Parsley
  • 3 tbsp Olive Oil
  • 4 Pieces Pita Bread

Instructions

  1. Sauté the aromatics: Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the red onion and garlic, and sauté for 3-4 minutes until translucent.
  2. Cook the chicken: Add the chicken mince to the skillet, breaking it apart while it cooks until browned, about 6-7 minutes. Season with salt and pepper.
  3. Mix in the flavors: Remove from heat and stir in lemon juice, lemon zest, mint, parsley, and crumbled feta cheese until well combined.
  4. Prep the pita: Heat a separate pan over medium-high heat, drizzle olive oil, cut the pita in half, and toast for 2-3 minutes until crispy.
  5. Stuff and enjoy: Open the pita pockets and fill them generously with the chicken and feta mixture. Serve immediately.
