500 g Chicken Mince
150 g Feta Cheese
1 Medium Red Onion, finely chopped
2 Cloves Garlic, minced
1 tbsp Lemon Juice
1 tsp Lemon Zest
2 tbsp Fresh Mint, chopped
2 tbsp Fresh Parsley
3 tbsp Olive Oil
4 Pieces Pita Bread
Instructions
Sauté the aromatics: Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the red onion and garlic, and sauté for 3-4 minutes until translucent.
Cook the chicken: Add the chicken mince to the skillet, breaking it apart while it cooks until browned, about 6-7 minutes. Season with salt and pepper.
Mix in the flavors: Remove from heat and stir in lemon juice, lemon zest, mint, parsley, and crumbled feta cheese until well combined.
Prep the pita: Heat a separate pan over medium-high heat, drizzle olive oil, cut the pita in half, and toast for 2-3 minutes until crispy.
Stuff and enjoy: Open the pita pockets and fill them generously with the chicken and feta mixture. Serve immediately.
