Creamy Lemon Pasta

  • 8 oz fresh pasta
  • 2 tbsp freshly cracked black pepper
  • 2 tbsp butter
  • ½ tbsp flour
  • ½ cup chicken broth
  • 1 lemon, zested and juiced (seeds removed)
  • ¾ cup heavy whipping cream
  • ½ cup freshly fine grated Parmesan Reggiano cheese
  • Cracked black pepper (for garnish)
  • Extra lemon zest (for garnish)

Instructions

  1. Start by bringing a large pot of salted water to a boil. Add your fresh pasta, cooking according to package directions (usually just 2-3 minutes).
  2. In a large skillet over medium heat, melt the butter. Add the flour and whisk continuously for about 1 minute, creating a roux.
  3. Gradually whisk in the chicken broth, making sure to keep those lumps at bay. Cook this down for about 2-3 minutes until it thickens.
  4. Lower the heat and slowly pour in the heavy cream. Stir continuously until the sauce is silky smooth and starts to thicken a little more.
  5. Stir in the freshly cracked black pepper, lemon zest, and lemon juice. Allow everything to mingle for a couple of minutes.
  6. Toss in your freshly grated Parmesan cheese, stirring until it melts into the sauce.
  7. Finally, add the cooked pasta, gently tossing it with the creamy sauce until each noodle is coated.

Notes

Feel free to add cooked chicken, shrimp, or sautéed vegetables for extra nutrition. Adjust lemon juice for tartness to your liking.
