Yogurt Cloud Cake

A light and fluffy cake made with yogurt, perfect for satisfying your sweet tooth without the heaviness.

Ingredients

  • 4 large egg whites
  • 1 cup plain yogurt
  • 1 cup (120 g) all-purpose flour
  • 3/4 cup (150 g) granulated sugar
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • 1/4 tsp salt
  • Zest of 1 lemon (28 g)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease and flour a 9-inch round cake pan or line it with parchment paper.
  3. Beat your egg whites until soft peaks form.
  4. Mix the yogurt, sugar, and vanilla extract until smooth.
  5. Sift the flour, baking powder, salt, and lemon zest into the yogurt mixture.
  6. Incorporate the whipped egg whites into the yogurt batter gently.
  7. Transfer the batter into the prepared cake pan.
  8. Bake for 25-30 minutes or until a toothpick comes out clean.
  9. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack.

Notes

Optional toppings include whipped cream, lemon glaze, or fresh berries.
