  • 1 stick unsalted butter, softened (1/2 cup)
  • 1⅓ cups all-purpose flour (167g)
  • ¾ cup granulated sugar (160g)
  • 1 Tbsp brown sugar (18g)
  • 1 tsp vanilla extract
  • 1 large egg yolk (room temperature)
  • 23 Tbsp lemon zest
  • ¼ tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp salt
  • ¼ cup sugar (for coating, optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream the butter, granulated sugar, and brown sugar together until fluffy.
  3. Add the egg yolk and vanilla extract to the mixture and mix until well incorporated.
  4. Zest the lemons and stir the zest into the mixture.
  5. Combine the flour, baking soda, baking powder, and salt in a separate bowl and whisk together.
  6. Gradually combine the dry ingredients with the wet ingredients until just mixed.
  7. Chill the dough for about 30 minutes (optional but recommended).
  8. Shape the dough into balls and roll in sugar if desired.
  9. Place cookie balls on a lined baking sheet, spacing them 2 inches apart.
  10. Bake for 10-12 minutes, until edges are golden and centers are soft.
  11. Cool on a wire rack before serving.

Notes

For a deeper flavor, consider using coconut sugar. For variations, you can add culinary lavender, dried cranberries, or make a vegan version with coconut oil and a flax egg.
