Zuppa Toscana

A comforting Italian soup with rich flavors from Italian sausage, potatoes, and kale, perfect for chilly evenings.

  • 1 lb Italian sausage
  • 2 large potatoes (Russet or Yukon Gold)
  • 2 cups chopped kale
  • 1 cup heavy cream
  • 4 cups low-sodium chicken broth
  • 2 cloves garlic, minced
  • 1 onion, finely chopped
  • 1/2 tsp red pepper flakes
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Heat a drizzle of olive oil in a large pot over medium heat. Add finely chopped onion and minced garlic, sautéing until fragrant (about 3 to 4 minutes).
  2. Add Italian sausage and cook until browned, breaking it into bite-sized chunks.
  3. Stir in the diced potatoes and cook for about 3 minutes, stirring occasionally.
  4. Pour in the chicken broth, bring to a gentle boil, reduce heat to low, cover, and let simmer for about 15 minutes, or until potatoes are fork-tender.
  5. Add the chopped kale and let it wilt for about 5 minutes.
  6. Stir in the heavy cream until slightly thickened.
  7. Season with red pepper flakes, salt, and pepper to taste.
  8. Ladle the soup into warm bowls and serve.

Notes

Serve with grated parmesan cheese and crusty bread for dipping.
