Homemade Starbucks Copycat Lemon Loaf

A delightful and moist lemon loaf inspired by Starbucks, perfect for any occasion.

  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup milk
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 cup powdered sugar (for icing)
  • 2 tablespoons lemon juice (for icing)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease your loaf pan.
  2. Whisk together the flour, baking powder, baking soda, and salt in a medium bowl.
  3. Beat the butter and sugar in a large bowl until light and fluffy.
  4. Add the eggs and vanilla extract, mixing until well combined.
  5. Incorporate the dry ingredients alternately with the milk until just combined.
  6. Fold in the fresh lemon juice and zest until evenly distributed.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50-60 minutes, or until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes before transferring to a wire rack.
  10. Whisk together powdered sugar and lemon juice to create icing and drizzle over the cooled loaf.
