A cozy and flavorful take on traditional lasagna, this one-pot lasagna soup combines savory flavors, tender noodles, and rich tomato sauce, perfect for chilly nights.

  • 1 pound ground beef or turkey
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken or beef broth
  • 2 tablespoons tomato paste
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil or parsley for garnish

Instructions

  1. Brown the meat in a large pot over medium heat until browned (about 5-7 minutes). If necessary, drain some grease.
  2. Sauté the chopped onion until softened (3-4 minutes), then add minced garlic and stir until fragrant (1-2 minutes).
  3. Add the crushed tomatoes, broth, and tomato paste, scraping the bottom of the pot to incorporate flavorful bits.
  4. Season with Italian seasoning, salt, and pepper, and let simmer for about 10 minutes.
  5. Break in the lasagna noodles, stir occasionally, and let simmer until noodles are al dente (about 10-12 minutes).
  6. Remove from heat and stir in ricotta cheese until well combined.
  7. Garnish with shredded mozzarella and fresh basil or parsley before serving.

Notes

For a vegetarian option, substitute ground meat with plant-based alternative and use vegetable broth. This soup freezes well, omit noodles before freezing.
