Lemon Cream Chia Pudding

A refreshing and uplifting breakfast treat combining the creamy sweetness of chia pudding with zesty lemon flavor.

  • 2 cups Almond Milk
  • 1/4 cup Lemon Juice
  • 2 tablespoons Lemon Zest
  • 3 tablespoons Maple Syrup
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Chia Seeds
  • 1/2 cup Greek Yogurt or Coconut Cream (optional)
  • 1 cup Fresh Berries
  • 1 tablespoon Extra Lemon Zest

Instructions

  1. Combine your base: In a medium-sized mixing bowl, pour in the 2 cups of almond milk and follow with the 1/4 cup of freshly squeezed lemon juice. Stir gently to combine the liquids.
  2. Zest away: Add the zest! Sprinkle in 2 tablespoons of lemon zest and stir.
  3. Sweeten the deal: Add the 3 tablespoons of maple syrup and mix well.
  4. Add the chia: Stir in the 1/2 cup of chia seeds to prevent clumping.
  5. In goes the creaminess (optional): If using, add the 1/2 cup of Greek yogurt or coconut cream and stir.
  6. Chill for at least 2 hours: Cover and refrigerate.
  7. Serve time: Stir, adjust consistency with almond milk if needed, and serve with fresh berries and extra lemon zest.

Notes
