A delicious and hassle-free one pan meal with chicken and colorful bell peppers, perfect for busy weeknights.

  • 2 bell peppers (red and yellow), sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil

Instructions

  1. Prep your ingredients: Slice bell peppers and onion, and mince garlic.
  2. Heat the pan: In a large skillet, heat olive oil over medium heat.
  3. Sear the chicken: Season chicken with salt, pepper, and paprika; sear in the pan for 5-7 minutes on each side.
  4. Add the aromatics: Stir in sliced onions and bell peppers with the chicken.
  5. Simmer until cooked through: Cover and simmer for another 10 minutes.
  6. Taste and adjust seasoning if necessary.
  7. Garnish and serve: Sprinkle fresh parsley on top before serving.

Notes

For a richer flavor, use chicken thighs. You can experiment with different bell pepper colors and spices for unique tastes.
