Strawberry Chia Seed Pudding

A deliciously nourishing treat made with fresh strawberries and chia seeds, perfect for breakfast or dessert.

  • 1 cup unsweetened almond milk (or any milk you prefer)
  • 3 tablespoons chia seeds
  • 1 to 2 teaspoons honey or maple syrup (optional)
  • 1/2 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. Prepare the strawberries: Slice your fresh strawberries in half and chop larger ones. Save a few whole strawberries for topping.
  2. Blend your base: In a blender, combine sliced strawberries, almond milk, honey (or maple syrup), vanilla extract, and a pinch of salt. Blend until smooth.
  3. Mix in the chia seeds: Transfer the mixture to a bowl and stir in chia seeds. Let it sit for about 5 minutes, then stir again.
  4. Chill it out: Cover and refrigerate for at least 2-3 hours or overnight.
  5. Serve and enjoy: Once set, stir the pudding and serve in bowls or glasses, topping with reserved strawberries.
