Honey Sriracha Salmon Bowls

  • 2 salmon fillets
  • 2 tablespoons honey
  • 2 tablespoons sriracha sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 1 cup cooked rice (white or brown)
  • 1 cup mixed vegetables
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Prepare the marinade: In a small bowl, whisk together the honey, sriracha, soy sauce, and a pinch of salt and pepper.
  2. Marinate the salmon: Place the salmon fillets in a shallow dish and pour the marinade over them. Let marinate for 15-20 minutes.
  3. Cook the rice: Prepare rice according to package instructions.
  4. Sear the salmon: Heat olive oil in a skillet over medium heat, place salmon skin side down, and sear for 4-5 minutes.
  5. Flip the fillets: Turn salmon, pour remaining marinade over, and cook for another 4-5 minutes until opaque.
  6. Cook the vegetables: Remove salmon, add mixed vegetables to the skillet, and stir-fry until tender-crisp.
  7. Assemble the bowls: Scoop rice into bowls, top with vegetables and salmon, drizzle with leftover sauce.
  8. Garnish: Sprinkle with chopped green onions.

Notes

For a lighter option, consider swapping rice with spiralized zucchini or cauliflower rice.
