Irish Mint Brownies

  • 1 cup unsalted butter
  • 1 cup sugar
  • 1 cup brown sugar
  • 1 cup cocoa powder
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup cream cheese, softened
  • 2 cups powdered sugar
  • 1 teaspoon peppermint extract
  • Green food coloring (optional)
  • 1/2 cup dark chocolate, melted

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×13 inch baking pan by greasing it with butter or lining it with parchment paper.
  3. Melt the unsalted butter and cocoa together in a large mixing bowl.
  4. Mix in the granulated sugar and brown sugar until fully combined.
  5. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  6. Fold in the flour, salt, and baking powder, being careful not to overmix.
  7. Pour the brownie mixture into the prepared pan and smooth the top.
  8. Bake for 25-30 minutes or until a toothpick inserted comes out with a few moist crumbs.
  9. Prepare the mint layer by mixing softened cream cheese, powdered sugar, and peppermint extract until smooth.
  10. Spread the mint mixture evenly over the cooled brownies.
  11. Melt the dark chocolate and drizzle it over the mint layer.
  12. Chill in the refrigerator for at least 30 minutes, then slice into squares.

Notes

For an extra minty flavor, consider adding chopped peppermint patties to the brownie batter. Adjust baking times carefully to avoid dry brownies.
