Strawberry Pizza

A delightful dessert that combines fresh strawberries with a creamy topping on a buttery cookie crust.

  • 6 Tbsp butter (softened)
  • 1/2 cup sugar
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1/4 tsp almond extract
  • 1 1/4 cups flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 cups sliced fresh strawberries
  • 1/2 cup sugar (for filling)
  • 2 Tbsp cornstarch
  • 1/2 tsp lemon zest
  • 8 oz package cream cheese
  • 1 cup powdered sugar (confectioners’ sugar)
  • 1/2 tsp vanilla extract
  • 2 cups sliced fresh strawberries (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and combine the softened butter and 1/2 cup sugar until light and fluffy.
  2. Add the egg, vanilla extract, and almond extract, mixing well.
  3. Whisk together the flour, baking powder, and salt, then gradually mix into the butter mixture until just combined.
  4. Bake the dough in a greased round pizza pan for 15-20 minutes until edges are light golden brown. Let cool.
  5. Combine 2 cups of sliced strawberries, 1/2 cup sugar, cornstarch, and lemon zest in a saucepan; cook until thickened (5-7 minutes) then let cool.
  6. Beat the cream cheese until smooth, add powdered sugar and vanilla extract, beating until creamy.
  7. Spread the cream cheese mixture over the cooled crust, then top with the strawberry filling and remaining sliced strawberries.
  8. Refrigerate for at least 1 hour before serving.

Notes

For variations, consider adding mixed berries, a chocolate drizzle, or creating a vegan version.
